Origine de la cuisine Réunionnaise (1ère partie)

«La cuisine réunionnaise descend du bateau, venant des grandes civilisations, au commencement de notre peuplement, au 17ième siècle.

La tentation est grande de la faire dériver de l’Inde, de la France, de Madagascar et dans une moindre mesure du continent Africain.

Mais de quelle France, celle de la Rochelle, celle du pays Picard, de Toulouse ?

De quelle région de Madagascar ?

Peut-être que l’apport français de notre cuisine était déjà au pluriel dans la mesure où il n’existe pas une cuisine française standard destinée à ces voyageurs des mers.

L’exemple de la viande de porc fumée est à ce titre évocateur. La matière première qui donne aux haricots et autres pois leur goût, aussi bien dans le cassoulet ; le feijoada, ou le ‘’kari poi boukané’’ est certainement le porc. Son utilisation vient tout droit, dès le 17 siècle, des campagnes française et européennes. L’élevage de porc, son abattage domestique, sa préparation et son entrés dans un autre cycle, dans d’autres goûts. »

The origins of Reunion islands cuisine (Part 1)

‘’ The cuisine of Reunion Island descends from the boats, coming from the great civilisations, at the start of our inhabitation of the island, in the 17th century.

There is a great temptation to place its origins in India, in France, in Madagascan, and to a smaller extent, in the African continent.

But from which France, that of La Rochelle, that of Picardy, of Toulouse?

From which region of Madagascan? Perhaps the French contribution to our cuisine was already in the plural in the sense that there was no standard French cuisine destined for these sea travellers.

The example of smoked pork is in this respect evocative. The principle matter which gives beans and peas their taste, whether it be in the cassoulet, the fejjoada, or the ‘’kari pois boukané’’ is undoubtedly pork. Its use comes directly from the 17th century, from the French and European countrysides. The raising of pigs, their domestic slaughter and the preparation of pork have undergone great changes here and have become part of a different cycle, of different tastes.’’
